Monday: C.O.R.N (term courtesy of Home-ec101.com) (we have purposely made leftover of oven swiss steak, and there’s.. chicken fried steak, smashed potatoes with ricotta/mozz/parm blend from last week’s calzones, old bay seasoned corn on the cob..)
Tuesday: Crockpot Gyros (I’m using pork and beef, cuz that’s what is in the fridge) with homemade pitas (that I still haven’t made. *sigh*) with this Tzatziki recipe, substitute basil for dill, though.
Wednesday: French Bread Pizza (youth church night)
Thursday: Tacos on fried corn tortillas. Chipotle Restaurant Copycat recipe Lime/Cilantro Rice.
Friday: Enchilada casserole topped with sour cream, fresh salsa, and shredded lettuce (my sauce recipe is like this one) Refried Black Beans. Spanish Rice (I’m using vegetable stock.)
Saturday: Oat cakes, without apple topping, fried potatoes with onion, scrambled eggs with cheese, fruit
Sunday: Meatloaf, caramelized onions, baked potatoes, sweet corn cake
