Kitchen Miracle – Fast and Yummy Mashed Potatoes

(please excuse the dark photo.. we are working on this and this is one of the reasons that the blog posts have fallen behind..)

I spent the week before Christmas getting everything perfect, around the house. Everything was clean. Refrigerator and pantry were stocked. Meals were planned. Children were all going to be home, for a week.

Then I got a sore throat.

Two days before Christmas, I knew I had about a day, of energy, left, in me.

In my desperate attempt to simplify, I bought this at Sam’s…

Now, there is a right way and a wrong way to go about instant mashed potatoes. I have been very successful, with them, if I don’t follow the package directions.. I use them as a guide for water/milk/potatoes, planning about 1/4-1/2 cup more potatoes.

Also.. pearls or pieces of potato seem to work, better, than flakes.

We really do not like the kind in the brown box, at the grocery store. This has been a real challenge to my food storage. IF we won’t eat it, I don’t need to store it.

I did not taste my recipe, before I served it. I didn’t feel well enough to care? LOL I’m kidding.

After all the “these are so good’s,” I decided I could post this..

I used a ton of butter yesterday, so if you are afraid of butter, close your browser now.. :)

Seasoned Mashed Potatoes
6 cups water
2 cups whole milk
1/2 cup butter
2 level Tablespoons Ranch Dressing Mix
(I was unable to Kwout the recipe, here, because apparently I block the service. Or maybe blogger does?)

Bring to a boil. Remove from heat. Add 3 1/4 cups instant mashed potatoes. I measured out the 3 cups, per the box directions, and sprinkled the rest on. IF its too thin, add a little more. Its easier to make it thicker than to thin it.. these particular potatoes go farther than you’d expect, too.


I just mixed it up, put it in a corning ware dish, and put it on the table!

I’m beginning to really like this Ranch Dressing Mix..
