Ugly Enchilada Casserole

This casserole goes together like lasagne..  adjust the amount of soup mix to your liking.  We like it rather wet, and that makes it sloppy on a serving dish. 

2-2.5 pounds shredded beef, chicken, turkey, or ground meat
(I used leftover beef pot roast, from my crock pot.)

2 pounds shredded cheddar cheese (shred in food processor, after shredded pepper/cilantro)
20 slices co-jack cheese
1 Cubanelle Pepper (I tried this because I did not have a small can of fire roasted chilies.)
Handful of Fresh Cilantro
1 small can sliced black olives
6 scallions, sliced
16 corn tortillas
1/2 cup sour cream

Toppings: More Sour Cream, Salsa or Chopped Tomatoes, and Shredded Lettuce

Make Enchilada Sauce Recipe
Make Cream of Something Soup Recipe

In food processor:
Grate seeded pepper strips and cilantro
(no need to wash processor before grating cheese)

Add grated mix, with shredded meat, to Enchilada Sauce Pan and mix.

Grate Cheddar Cheese

In large 10×13 glass baking dish, layer:

3 large ladles of cream of something soup
Layer of 6 corn tortillas, torn into pieces
1/2 of the enchilada sauce/meat mix
1/3 of the shredded cheddar cheese
Layer of sliced co-jack cheese

4-5 large ladles of cream of something soup
Layer of 6 corn tortillas, torn into pieces
1/2 of the enchilada sauce/meat mix
1/2 of the shredded cheddar cheese
Layer of sliced co-jack cheese

Layer of 4 corn tortillas, torn into pieces

Top with rest of shredded cheddar cheese
2 cups cream soup with 1/2 cup sour cream mixed into it
Sliced Scallions
Sliced Black Olives

Bake, uncovered, 350 degrees, until bubbly and melted

Serve with shredded lettuce, diced tomatoes, or salsa, and sour cream

This will feed an army and would be great for a potluck.
