Ugly Tater Tot Casserole

I had about 5 cups of Cream of Something soup, left-over, from last nights dinner, so I decided now was a good time to quickly throw together an easy tater-tot casserole.

6 pounds ground meat (I used venison.)
5 cups Cream of Something Soup
1 pound frozen vegetables (I used whole kernel corn.)
Sliced or shredded cheese (optional)
1 – 1.5 pound frozen tater tots (I use a big bag and just put one layer across the entire top. I’m not particular about it.)

Brown the meat. Add a liberal layer of onion powder, garlic powder, and ground black pepper. Season, with salt, to your desired taste.. and drain. Mix soup into meat, in 10×13 glass casserole dish. (I usually make this in this bigger dish to spread out the tots and let them brown more.)

Sprinkle the frozen vegetables right on top. I chose to stir mine in.

Add a layer of cheese. I chose to use sliced co-jack, but I have used any flavor of shredded cheese, too.

Top with tots.

Bake 400 degrees until hot, bubbly and browned, on top. Mine took about 40 minutes, tonight.

Next time, I’ll try a can of fire roasted chili’s or a minced cubanelle or poblano pepper. Some chili powder or Mrs. Dash Chipotle spice would season the meat, nice. Jack (or Pepper Jack) cheese would keep the mexican flavor going..

Or with Old Bay..   and onions..

Tomorrow..  tamale pie..
