Monday Menu Planninng – January 12

This week:
Monday – Sloppy Joes, with cheese, on Kaiser Rolls, in the Freezer
Tuesday – Beef and Black Bean Soup, Corn Bread
Wednesday – Leftover’s and Pasta Fagioli, in Freezer, from last week. (Photo Meet-up, should I
have Gyros or Just Yummy Bean soup? Both? Good choice!)
Thursday – Shepherd’s Pie (with Kidney Beans and Hominy), Salad, Basil Butter Carrots
Friday –Peach BBQ Salmon, Salad, Basil Green Beans
Saturday – Frito Pie, Jalapeno Cream Cheese Corn (with sour cream and shredded lettuce)
Sunday – Tomato Soup and Grilled Cheese Sammiches

Last week:
Last week’s menu was going along just fine.. until I didn’t make it to Sam’s to buy some needed ingredients, and then my microwave oven died. I don’t really do very much with my microwave oven. I really would love to live without it. But, it seems that my family is incapable of unwilling to reheat left-overs, without one.
That aside, I could boil water or melt butter and chocolate without one..
But, I seem to have forgotten how to defrost meat, without it. I simply love the turbo sensor whatever defrost, where none of the meat is cooked, when I removed it! Its simply too easy. I did not have any habitual reminders to take meat, out of the freezer, before it was immediately needed. *sigh*
It took me a few years to find my microwave. I guess I can start looking again, while everyone complains that they didn’t know our old one was so small. The poor ole’ Kenmore looks likes it been stored, without climate control.. because it has.
Ideally, I’d like one OVEN that could do multi-functions.. replacing the toaster oven and microwave.. and even throwing some convection, my way.
Yeah.. I’m dreaming, again.

I never made the Lentil Vegetable soup. We had leftover Pasta Fagioli, on Tuesday, and Taco Salad, on Wednesday. I only used half of the taco meat mix, so it made the Tamale Pie go together, very quickly, on Thursday.
~Kitchen Disaster Alert~
The first batch of Chipotle Cilantro Lime Rice came out beautifully. Everyone raved about it. Kitchen Miracle.. Indeed!
The next night, I decided to make it, again, for the Chicken Adobo. I had doubled the recipe, on Thursday and had just enough rice, left, to triple it, for Friday. Wrong thought. It did not triple, well, at all. It was too tangy, too sticky, too gross and we fed it to the plastic white box, at the end of the cabinet.
Lesson learned.
The weekend menu was completely thrown to the wind, when I caught up on much lost sleep and lost all the daytime hours on both Saturday and Sunday. I’m not giving up, though.

    I guess that’s cheating, really.. where I cook the meat once, for two different meals. :)

    I’m really trying to NOT have Mexican food five days a week. Yet, the inventory is friendly, for it..
