Monday Menu Planninng – January 19

Last week’s menu was full of many challenges.. of the sleep irregularity/deprivation type. The week started out well, and everyone thoroughly loved the Sloppy Joes.

I ended up taking the sloppy Joe left-overs, adding 1 large (80 oz?) can of kidney beans, 1 – 29oz(?) can of seasoned Black Beans, and a small can of tomato paste, to make my chili, for the Frito Pie. That went over real well, too.

Last night, I cheated, and you will read about that, soon.

Next Saturday, starts our week vacation, in Florida. I usually cook, a lot, down there, because the kitchen is just so gloriously open and large, compared to my home kitchen, but I am not going to menu plan it.

I do have quite a few new-to-us foods and cheeses, in the fridge, so I hunted down some new recipes, to try.

Monday – Venison Burgers Parmisan, Penne with Brocolli and Ricotta, , Salad, Roasted Garlic Muffins

Tuesday – Southwest Stuffed Peppers, El Pollo Loco Beans, (I don’t have ground serrano, but I’m going to go with what I have, find some, and try again to compare.) Salad, Corn Cake (I’ll use butter, of course.)

Wednesday – Baked Salmon, Baked Farfalle with Brocolli, HM Alfredo Sauce, Basil Butter Carrots, Bacon Gruyere and Scallion Muffins

Thursday – Mexican Rice Casserole (I have no idea what Mexicorn is, but I am going to add fire roasted green chilis and use regular thawed corn.) I will top this with shredded lettuce and sour cream, and serve it with Mexican Black Beans, and tortillas.

Friday – Meatloaf (so plenty of leftover sammiches for travel), Skillet Corn, Chive Risotto Cakes, Basil Green Beans

Saturday off to Florida until February 2nd.

Does your family eat savory muffins? This week is our first attempt to see how we feel about them.

    Looks yummy ! I’ll have to come back when I plan next weeks menu … I’m always on the lookout for good mexican recipes ! Let me know if any of them are outstanding !!

    Hey Bonnie,

    I’m from San Diego, California. My mom was taught to cook by my step-father, whose parents were born in Mexico. Every meal she cooked was Mexican, with salsa, tortillas.. the full works..

    So, I fear, sometimes, that my menu’s are too Mexican. But I use more chili powder, than anything else.. so I am also always looking for new things, to try.

    I’m also working black beans in to all my own recipes, now, too, so its like starting over, all new.

    I’ll be sure to blog when the dish is a big win/win.

Monday Menu Planninng – January 19
