Chocolate Love from a Box!

Monday’s are “Muffin Monday” in Seminary.

As the 6am hour, is frigid, lately, I look forward to the mornings that I have a child bring out a muffin, or two, for me, too.

Who am I kidding? I love muffins, so much, I added making them, weekly, to my 101 in 1001 challenge.

This morning, I started with two boxes of Jiffy Chocolate Muffin Mix.

I dumped them into a bowl, added a handful more of mini chocolate chips, and the zest of one large naval orange.

In a mason jar, I quickly whisked together:

  • 1/2 cup whole organic milk
  • 2 large brown free-range eggs
  • 1 Tablespoon olive oil

I poured the wet into the dry and mixed just until it was moistened.

I started by filling each muffin tin (I used aluminum) 1/2 full, with a measuring cup.  I really need a spring-loaded ice cream scoop, to make this less messy..  Then I went back and equally balanced the rest..

I baked them at 400 degrees for about 12 minutes. 

**Tips**

I watch them, close, towards the end.. over cooking is the main reason for dried out cake.  I don’t toothpick test.. I touch.. I look for a dry top or a little spring..

My rule with quick breads and muffins is “3 minutes from wet to oven.”  Once that leavening (baking powder, in most cases) gets wet, its imperitive to not kill it, before it all starts to bake.  This means that preparing pans, and getting your oven up to temperature, before anything gets wet, is a must!

If I get delayed, for any reason, I usually re-add the leavening.  That’s an emergency type thing, though, as this could change the recipe, too much, too.

This recipe just happened, from having these muffins, last week, just like the box directs..  The orange zest was a nice touch.  The oil made them a little moister, too.

I will vary this, again, with some yogurt..

I was worried about chocolate muffins.  I love cake.. everyone knows this.. but I’m not a big fan of icing/frosting.. I think this is why I love muffins slightly more than cuppiecakes.  Don’t tell anyone I said that! :)
