Monday Menu Planning – February 16

Our menu, last week, did NOT work for me. Life was just too busy to try new recipes. Only the tried and true seemed to survive, with some Sonic thrown into the non-balance.

I cooked up a bunch of perishable ingredients, on Sunday, and put them up, in the freezer. There is still much, to do, but I’m hoping that somehow, I can incorporate this tecnique into our almost everyday.

I have a ton of potatoes and frozen broccoli.. I’m planning some of these recipes, later in the week, so I can have a little time to make some of the side recipes, that are needed, to go with them. We’ll see how the week goes and if I’ll have to run to the store for some substitutes.

Monday – Ground Beef Gyros sans lettuce, on Plain Tandoori Bread, topped with Sauce made with Fage Total, Chopped Tomatoes and Sliced Onions, Greek Salad

Tuesday – Peanut Chicken, Toasted Almond Broccoli, Kicks Like a Mule Jalapeno Cornbread Muffins, Green Salad with HM Dressing (For Chicken allergic: Leftover Tortilla Soup on HM Tortillas Strings/Strips, topped with shredded Jack Cheese and sour cream.)

Wednesday – Sour Cream Noodle Bake (I’m going to add Cubanelle Peppers to this.), Broccoli Caserole, Bacon, Gruyere, and Scallion Muffins (we love these muffins!)

Thursday – Encharitto Casserole, (topped with shredded lettuce, salsa, and sour cream.) Spanish Rice, El Pollo Loco Refried Beans ( I love these refried beans, so much, that I went to three stores to find Serrano Chilies. :) ) Cheesy Corn Muffins (with Gouda, because I need to use it up.)

Thursday – Baked Potato Soup, Crusty French Bread (possibly Apple Strudel Muffins.)

Friday – Chicken Fried Steak with Cracked Pepper Gravy, Mashed Potatoes, Creamed Broccoli with Almonds, Corn and Red Peppers with Cumin , Sour Cream Biscuits (I’m going to try this recipe, for HM Bisquick. I’m going to make this with butter, and store it in the refrigerator.),

Saturday – Fried Meatloaf burgers, (recipe to follow when I make it up. LOL) Broccoli Cheesy Rice, Salad with HM Balsamic Vinaigrette.

Sunday – Teriyaki mini Meatloaves, with this recipe for Teriyaki Sauce and this recipe for honey BBQ sauce, sans garlic, substituting Amber Agave Nectar for the honey, Sour Cream Potatoes, Cheesy Garlic Biscuits. (I’m going to use this recipe, for HM Bisquick, again, if it works out.) Green salad with HM Ranch Dressing.
