Monday Menu Planning – February 23

Half of my menu, last week, was made, and put-up in the freezer.

gryosThe ground beef gyros were amazing. We made them into Gyros Sandwiches, the first night (which happened to be Wednesday.) I had doubled the recipe and made 8 burgers. The next two nights, because we weren’t all home, I sliced the burgers and fried the slices, after bacon, to brown them on each side, and had them over salads, with HM Bacon Ranch. I will make them again.

I really didn’t like the tzatziki sauce, in this recipe. I prefer this one, with basil, in place of the dill.

Wednesday’s meal was made Monday and was very good.broc cass sr crm bake Everyone really liked the Sour Cream Noodle Bake. I only changed it to add black beans and cubanelle peppers, cooked with the meat. “The Boy” really liked the Broccoli Casserole, (even if I can’t spell, in last weeks menu.) *snicker*

I found some broken canning jars in the freezer, so I removed some previous leftovers and we’ve been reheating the ones that were still in intact jars.

I will repeat the menu items that we didn’t get to.. I didn’t make the peanut chicken because I needed to experiment with different ingredients, to figure out a recipe, that I needed to share. I’m still excited to try that..

I have two big bags of Romaine Hearts, 5 Euro cucumbers, 6 big bell peppers, and a bowl of nice Roma Tomatoes.. so salads it shall be..

Monday – Chipotle Taco Salad (Ground beef, with red bell pepper and Chipotle Chili Powder, in the Freezer.)

Tuesday – Grilled Cheese and Left Over Tomato Soup

Wednesday – Chicken Fried Steak Salad (Strips of the Chicken Fried Steak, in the freezer, with HM Bacon Ranch Dressing.)

Thursday – Tacos (meat in freezer) El Pollo Loco Beans, and Chipotle Lime Basmati Rice
(Serrano Chilies, Cilantro, and limes seem to have regular residence in my fridge, now.)

Friday – Peanut Chicken. Mac N Cheese (Freezer, in square pans.) Basil Buttered Green Beans, Green Salad.

Saturday – Chili Mac, Cheesy Garlic Bread, and Green Salad (chili mac is in freezer)

Sunday – Salisbury Steak (with the HM Cream of Mushroom soup and the spices in this recipe, with Better Than Bouillon, for soup mix. I know it seems complicated, but its an allergy thing.) Mashed Potatoes. Corn with Red Peppers and Cumin. Jalapeno Corn Muffins.
