3 Muffin Recipes.. Two Keepers..

1ststrawmuffIts no surprise that I love muffins.. I’m not the greatest lover of cooked fruit, however.

I’ve wanted to make a muffin, with fresh strawberries, for a while now..

The first strawberry muffin recipe, I tried, called for Whole Wheat Pastry Flour. After an hour, of online research, to figure out what could make my King Arthur “Pastry” quality, I decided to use regular all-purpose flour and experiment, on that level, another time.

I don’t want to put cornstarch in it, and I don’t, yet, know if Arrowroot powder would work.. although I can’t see why it wouldn’t. I was, also, worried that the whole wheat flour may be too heavy..

Joy of Baking says to mix cake flour with all-purpose flour, but I’m not interested in the chlorinated cake flour, at all.

While I was at JoyofBaking, however, I noticed this, too..

All this time, I thought that sifted flour was still the same flour.. not thinking about it being less flour.. I, usually, put a measured cup, of flour, into the sifter.. not measure the sifted flour, after its sifted. Hmm.. I’ve only been baking for 30+ years, too!

I really want that digital scale, now. My birthday is next month. *hint hint hint*

Back to that strawberry muffin recipe, for a minute. If you know anything, about me, you KNOW I did not use egg or sugar substitute.. so don’t freak out, on me. I, also, used butter, instead of canola oil. I also put a tad bit of vanilla extract with the almond extract. (and I used demerera sugar..)strawmuffin

Wanting a sweeter muffin, I tried this strawberry muffin recipe. Oh my Gravy, these are so good. I increased the sugar to 1/2 cup (using demerera,) and put a heaping scant teaspoon of a mix of demerera sugar and plain white sugar (because that’s what’s in my sugar bowl, at the moment..) on my chopped berries, and let that sit while I prepped everything..

Being a dingbat, I added the flour to the sugar, so I decided to just cut the butter into both. I added the sweetened berries to the flour to coat them and mix them, more evenly, before adding all the wet ingredients.

I will try it, with the almond/vanilla extract mix, next time. Everyone loved this, second strawberry muffin recipe, better than the first one.

bananamuffinNow, for the Show Stopper.

This banana muffin recipe will forever change my kitchen. I don’t find a need to ever make banana bread, again. We also don’t have to wait over an hour to enjoy it, either.

Yes, its that good. Its just like my banana bread. Its moist.. and dense.. and just yum!

I did double the baking powder and kept it chocolate and nut-free.

One comment said that they doubled the recipe and used their jumbo muffin pans. Now, I need a jumbo muffin pan. Commercial-grade.. heavy.. dark.. 6 cups.. 2 would be nice.. (I need two of these, too!) please.. *grin*
