Menu Plan of the Week 6 April 2009

I’m so embarrassed, that I have still not eaten the Peanut Chicken. Its not personal. I really want to eat this.. my menu’s have been upside down, for a few weeks, and as I’ve been running late, around meal times, and my chicken is usually still frozen. So, as much as you may be sick of seeing this silly recipe link, in my menu, you will find it, again. If you’ve tried this, please tell me how you feel about it. The flavors appeal to me..

chicken enchiladasI made the Chicken Lime Enchiladas and the Roasted Garlic Baked Ziti, on Friday night. I added roasted garlic and red bell peppers to the enchiladas. I, also used McCormick Ground Chipotle Pepper, instead of Cayenne, because its what I have..

I used a rotisserie chicken, and I had a lot of filling left-over, so I made 12, since that’s what my pan fits, and used more cheese, to go over the top.

Absolutely delicious and a keeper recipe! Thanks Jami. I want to try your bread recipe, now, too. :)

Monday – Roasted Garlic Lasagne, Green Salad with HM Dressing, Feta Garlic Bread

Tuesday – Black-eyed Peas w/ham, rice, and Biscuits

Wednesday – (photo meetup) Leftovers

Thursday – (Palmetto Acoustic Series) Grilled Cheese and Tomato Soup

Friday – Burgers, on the grill, w/all the fixing, and Rosemary Roasted Potatoes

Saturday – Chipotle Baked Beans w/Smoked Sausage, brown rice, corn bread

Sunday – Chef Salads (chopped lunch meat, cheeses, cucumbers, beets, chopped fresh yellow squash, red bell pepper, boiled egg..)
