What to do??

bananasMuffins, like cuppycakes, are this little piece of cake.. that you can eat the whole thing!

I, simply, love them.

I vowed to make muffins more often.

Confession: I’ve been throwing away many bananas.

As much as I loved these banana muffins, there was this something, about them, that just wasn’t working for me.

I like puffy muffin tops.

I know its silly.

I also, love that crumby stuff, on top!

Guilt led to me try another muffin recipe.

Just as I put the batter, into the muffin pan, TheBoy asked me if I wanted him to turn on the oven. I had turned on the oven. There are two oven knobs, for my oven. I set one to the correct temperature.. but failed to turn the other one “on.”

I’m a fanatic about not getting quick breads wet, before the oven is ready.

After putting the crumb topping on each muffin, with my oven not yet up to temperature, I decided more crumbs were in order.

I, obviously had time on my hands.

Luckily, this recipe is very forgiving. The leavening didn’t die while waiting.

They are moist and dense and yummified. The topping.. meh! Tastes like flour and has no sugar. Must rectify that, next time.

I, also, found it makes 12 nice sized regular muffins. (Recipe states 10.)
