Fearless Friday – Pesto FTW!

As I stood, in the cookbook aisle, at the library, last week.. I was perusing indexes.. for specific recipes that I wanted to learn how to make.

Giada’s book was selected for Pesto.

I’ve seen Pesto made before.. but it still seemed overwhelming, to my thoughts.

My idea of “to taste” may be different than everyone else’s. I found that I needed to add much more salt, than I had expected, and three times the cheese that Giada’s recipe called for.. we are cheese hounds, though.. so your desired outcome may be, entirely, different.

If you add about 1 tsp of coarse sea salt (shshsh!) and 1/2 tsp of restaurant black pepper, my Pesto recipe is not much different, than this one, on the Zaar.

I’d still double the cheese, if you are using ordinary over-the-counter parmesan cheese. Don’t forget, too, to toast your pine nuts.

The secret, that I learned, in Giada’s book, is to add two ladles of the pasta cooking water.. right at the end, into the food processor. That tip is like the magic that turned what I thought was a disaster, into a yummy “Kitchen Miracle.”

Whole Foods, in Mt P., has big hydro grown Basil plants, in the produce department, 2 for $5. I was able to get 2 cups of packed leaves off of the plants, and still plant them, out back. Win.
