Experimentz in the name of Mayo

Now that we’ve mastered a HM version of Ketchup, I moved on to Eggless Mayo. (I tried to make Mayo with Eggs.. ick.)

I really do not like Mayo. I, usually use Mayo as part of a recipe.. and I’m rather snobbish.. I don’t do cheap Mayo.

Being from the West, I used to choose Best Foods, which, in the East, is Hellman’s. Same company.

Then I met Vegenaise.. Which doesn’t make me gag..

Worse than snobby Mayo, though, the price is outrageous.

I’ve been researching the many alternative milk “mayo’s” and I decided to experiment.

I purchased some Guar Gum, but it didn’t seem to make it to my kitchen.. or its lost, in other words. I don’t know how this happens. It just does. Too often. I think someone put it “away” without knowing what it was.. so now that I’m asking, no one knows..

My first recipe, I tried to use arrowroot powder, in place of Guar Gum. Not equivalent, at all. Didn’t thicken like I was desiring.

I found some Xanthan Gum in my pantry. See? This stuff just appears, sometimes. :)

I tried it.. and it worked.

My first recipe tasted good. It didn’t suck. But, the consistency, although good, was more like thick gravy. I reduced the Xanthan Gum and its a good consistency. I spread it a little thick, so you can see it, better. I think next time, I’ll try more salt.
