Works for Me – Crockpot Reuse

I’m recliner-bound, as the world spins around me. Still. I’m really okay, in general.. just have a constant headache and vertigo. Which is like being sick but not being sick. Mostly irritating.

So, I had this brilliant idea to share with you.. something I’ve been doing, that I didn’t really realize was worthy of sharing. I really considered it my lazy approach to fulfill a need. :)

I purchased several London Broils, when they were on sale, at Bi-Lo for $1.99 a pound.

The last two times, that I’ve cooked my Spicy Shredded Beef, in the crock pot, I’ve added a plain, second London Broil, to the empty liquid, after I removed the cooked meat, to shred. I add nothing else.

This is, usually, at night, after dinner, so I turn it on low and leave it til 5am, when we come alive, in the morning. (If I happen to awake around 2am, I turn it to warm, earlier.)

I, then, turn the crock pot to warm.. while I take the kids to their class, turn it off when I get home, and bag up the shredded meat, into two quart sized bags, in an hour or two, after its had time to cool, slightly.

Apparently, the spiciness of the shredded beef recipe, flavors the new meat sufficiently.. to have frozen cooked shredded meat, on hand, in the freezer.. (for weeks, like this, where life or illness get in the way of the menu.)

This works for me.

I use this meat for tacos, quesadillas, burritos, sandwiches, casseroles. With it cooked, already, the time to make a meal is greatly reduced.
