Kitchen Disaster Goes Fab Leftovers

I’m so far behind.. but my house looks semi-decent!

I can’t find clear Christmas Tree lights, and mine are burned out.. so the tree just sits here, looking gorgeous..

No menu, yet.. Not quite sure from day-to-day, this week, yet. The kids are going to Virginia, on Friday, so we may be back with the menu in a couple weeks. We’ll see how that rolls..

Last night, I tried to make carrot souffle.

I forgot I own a food processor, so I had chunky carrots.. and then when it was in the oven, and I was cleaning up.. I found the eggs, just sitting there.. *sigh*

So, tonight.. I had left-over pan fried burgers, left-over broccoli casserole, and the rest of the carrots, to cook.

I cooked the carrots until they were soft, while I saute’d a chopped sweet onion.

The carrot souffle is good when you follow the directions. :)

Tonight’s Kitchen Miracle..

Chopped Leftover Burger Melts

These are made like grilled cheese, in a panini type style, with a pot, on top, to hold it all together, while it browns and the cheese melt.

  • buttered Rye Bread
  • canned Whole Fire Roasted Chilies
  • Your choice of cheese, sliced thin (I used American and Jack)
  • Sliced cooked burgers tossed/heated in browned diced sweet onion
