A while back, I wrote a post about Protecting your Identity. It included forms to fill out and places to contact if your identity has been stolen.  We can’t live without the credit reporting agencies. They own us. Our futures and our finances depend on us getting on top of our own and Knowing what it says about us.

As a follow-up, I wanted to share a post from Bible Money Matters.  This post is about credit reporting agencies and how to know your credit score.

The federal government passed the Fair Credit Reporting Act legislation a while back that aimed to give consumers the ability to find out more about their own credit without having to pay one of the credit bureaus for the information.

Liz, at Hoosier HomeMade has a beautiful edible arrangement tutorial.

I’ve seen a tightly tucked chunks of lettuce or cabbage used in lieu of the foam.. the skewers go in real well. Oreos could be dipped and slipped onto skewers for a little bit of extra boom, too.

I’ve seen canning butter tutorials on youtube. I’ve read multiple canning butter articles.  Most were processing Ghee (or clarified butter) without the milkfat.  That isn’t what I wanted when I think of using emergency prepared canned butter.  I want the real stuff.

While Heather, at Home-ec101.com has some wonderful preparedness posts, I came across this comment, that grabbed my attention:

…melt the butter in the microwave while your jars are sterilizing, fill the hot jars, cap, process as you would jelly, and allow to cool until you can pick the jars up without burning yourself. Then dunk the jars into an icewater bath. Spend the next 15 minutes or so periodically picking up the jars and shaking them – butter separates when heated, and this will help re-homogenize it as it cools. The goal is to have smooth butter again when set. Worked like a charm.

That’s exactly what I’m talking about.  I have a ton of new jars still.  Now to experiment with butter.

I’d like to say that, eventually, I’d love to can ground beef, but I’d have to use a pressure cooker and that scares me silly. Maybe I’ll go on one of those trips to the cannery and do it there.  Wishful thinking..

I always walk through the prepared food section of Whole Foods, just because, every time I’m in the store (its naturally after all the gorgeous cheeses.)

On top of one of the hot food bars was this basket full of huge pieces of corn bread.  I immediately thought about getting some andouille sausage.  Then I reached up to a very large center piece and IT WAS WARM! Win. (My back injections don’t allow me to stand for long, in the kitchen, and I was over thrilled to just buy it.)

I bought four center pieces (over a half pound each.)  The biggest win is that I don’t care much how the dressing comes out, now, there is another piece of cornbread to ravish.  Well, shared between four people.

Awesome cornbread.  Not as sweet as mine.  But simply perfect.

My idea of convenience foods are dry pasta, bread, and cheese.  This cornbread just topped the list. You need to try it.

I haven’t updated about the duck eggs because its a sad story.

Just before the ALS walk, in Jacksonville, the first weekend of April, there were some broken duck eggs surrounding the nest, the duck and the drake.

We went to Jacksonville for the walk.

When we returned the ducks were gone.  The nest was abandoned and there sat the eggs.

I don’t know if something got the duck.  I don’t know if that stupid cat, that was antagonizing Aspen, in that same window, where the nest is, had anything to do with it.

I just avoided going out to look at the nest, to dispose of the eggs.  After ignoring the eggs, they seem to be either disintegrating or something is eating them.

What eats duck eggs?

This is what is going on outside my bedroom window.  For now, its quiet, and my cat thinks its rather interesting to sit above, in the window.  I don’t know why this duck chose my front bed, but I read that the ducks are moving away from the pond because of the geese.  I can’t believe how many eggs there are.  “Momma” tosses a couple eggs out, every so often.  We put a flash light up to them and they are empty. She must have an internal flashlight. heh

Monday : Corned Beef. I know this is weird. But this is the start of the corn beef week. Cabbage. Saute’d Yellow Squash and snow peas.  Salad with home made Ranch.

Tuesday: Tacos with Rotisserie Chicken, Onion, and Red Bell Pepper Saute

Wednesday: LowCountry Boil

Thursday: Happy St. Patrick’s Day.  Chicken Taco Salad (somehow I’m having corned beef, ha!)

Friday: Black Bean Soup with Goat Cheese. Sweet Pepper Corn Bread

Saturday: Home Made Pizza

Sunday: Breakfast for Dinner. Oatmeal Pancakes, Fried Red Potatoes with pepper and onions, Bacon/Sausage

(Lunches will be full of leftovers, corned beef on onion rye, and Okinomiyaki)

I’m excited that its Spring Break. It surprised me and I didn’t know it was this week.  Then the time changed and whacked up my brain. So not studying right now is a really good thing.

This time has given me time to work on the blogs.  So this weekend was a blog maintenance weekend.  I did some designing and there are a few new headers.

The recipe blog is back online.  The permalink structure has been redesigned and many links are broken in this blog.  Please know that I’m working on that and hope to have them fixed as soon as possible.

Its just about time to get out and clean up from the winter and do some planting for the spring. I was looking at plants, the other day, and I’m feeling this huge dilemma.  My herb garden must be started from scratch and I lost all the herbs on the front porch.. to non watering for ppl who didn’t want to go out early enough when it gets so hot in the late spring and summer. Namely ME.

I planted two rosemary for the front porch.  I’ll get pics when I get it all put back together.  At least there is no more fake poisettas out there, anymore.

Happy planting and we’ll get back to business as usual, soon.
